Ingredients

  • 10oz box frozen spinach
  • 8oz mushrooms
  • 1 clove garlic
  • 1 shallot
  • 1/4 tsp salt
  • 1 tbsp oil
  • 2oz crumbled feta cheese
  • 4 eggs
  • 1/4 cup grated Parmesan
  • 1/4 tsp pepper
  • 1 cup half and half
  • 1/2 cup shredded mozzarella

Directions

  1. Preheat the oven to 350. Thaw and squeeze as much moisture as your can out of the spinach. Thinly slice the mushrooms and mince the garlic.
  2. Add mushrooms, garlic, salt and cooking oil to the skillet. Saute until moisture is evaporated from the mushrooms.
  3. Brush 1 tbsp cooking oil inside a 9 inch pie plate. Layer the mushrooms, spinach and feta into the pie plate.
  4. In a bowl, whisk together eggs, Parmesan, pepper and half & half.
  5. Pour the egg mixture over the vegetables. Top with Shredded mozzarella.
  6. Bake for about 45 minutes or until golden brown on top and fully set.
