Ingredients
#- 10oz box frozen spinach
- 8oz mushrooms
- 1 clove garlic
- 1 shallot
- 1/4 tsp salt
- 1 tbsp oil
- 2oz crumbled feta cheese
- 4 eggs
- 1/4 cup grated Parmesan
- 1/4 tsp pepper
- 1 cup half and half
- 1/2 cup shredded mozzarella
Directions
#- Preheat the oven to 350. Thaw and squeeze as much moisture as your can out of
the spinach. Thinly slice the mushrooms and mince the garlic.
- Add mushrooms, garlic, salt and cooking oil to the skillet. Saute until
moisture is evaporated from the mushrooms.
- Brush 1 tbsp cooking oil inside a 9 inch pie plate. Layer the mushrooms,
spinach and feta into the pie plate.
- In a bowl, whisk together eggs, Parmesan, pepper and half & half.
- Pour the egg mixture over the vegetables. Top with Shredded mozzarella.
- Bake for about 45 minutes or until golden brown on top and fully set.
