Black Bean Burger

Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 red bell pepper, finely chopped
  • 1/2 onion, finely chopped
  • 3 cloves minced garlic
  • 1-1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1/2 cup breadcrumbs
  • 1/2 cup feta cheese
  • 2 eggs
  • 1 tbsp worcestershire sauce
  • salt
  • pepper

Directions

  1. Preheat oven to 325 F.
  2. Spread beans on a baking sheet and bake for 15 minutes, until slightly dried out.
  3. Increase oven temperature to 375 F.
  4. Heat oil, pepper, onion and garlic over medium heat until the vegetables are soft, about 5 minutes.
  5. Place in a large mixing bowl with all other ingredients except the beans.
  6. Mix it all together, then add the beans.
  7. Use a potato masher to get a good consistency.
  8. Form into patties with your hands.
  9. Place patties on parchment paper lined baking sheet and bake for 10 minutes on each side.
  10. Server with your favorite burger toppings.
