Ingredients
#- 2-3 bananas
- 2 tbsp curry powder
- 2 tsp ground coriander
- 1 tsp ground mustard
- 3 tbsp butter, melted
- Zest of 1 lime
- 4 tsp lime juice
- 1-1/4 tsp salt
- 1/2 tsp black pepper
- 3/4 cups water
- 4 chicken breasts
- 1 tbsp parsley
Directions
#- Preheat oven to 450 degrees.
- In a mixing bowl, mash the bananas with a fork then add curry powder,
coriander, ground mustard, melted butter, lime zest, lime juice, salt, pepper
and 1/4 cup water.
- Make a few deep cuts in each chicken breast and place them in a roasting
pan. Pour the curry sauce over the chicken, making sure the sauce gets into
the cuts.
- Roast in the bottom third of the oven for 20 minutes, until the chicken in
cooked.
- Remove the pan from the oven, and the chicken from the pan. There should be
plenty of thick sauce in the bottom of the pan.
- Set the pan over medium heat whisk in the remaining 1/2 cup of water until
the sauce is heated through.
- Top with parsley and serve with rice.
