Ingredients
#- 1 cup oil
- 2 cups granulated sugar
- 3 eggs
- 2 tsp vanilla
- 2 cup solid pack pumpkin
- 2 cup flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tsp pumpkin pie spice
Directions
#- In a medium bowl, mix the oil, sugar, eggs, vanilla and pumpkin. Set aside.
- In a separate bowl, mix the flour, salt, baking soda, baking powder, cinnamon
and pumpkin pie spice.
- Add the wet ingredients to the dry ingredients and mix only until
combined. Do not over mix.
- Grease and flour two 9x5 inch loaf pans. Divide the batter between the two
loaf pans.
- Bake at 325 F for 45 - 50 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for 10 minutes before turning onto a wire
rack to cool completely.
- Sprinkle top of loafs with powdered sugar.
