Pumpkin Bread

Ingredients

  • 1 cup oil
  • 2 cups granulated sugar
  • 3 eggs
  • 2 tsp vanilla
  • 2 cup solid pack pumpkin
  • 2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice

Directions

  1. In a medium bowl, mix the oil, sugar, eggs, vanilla and pumpkin. Set aside.
  2. In a separate bowl, mix the flour, salt, baking soda, baking powder, cinnamon and pumpkin pie spice.
  3. Add the wet ingredients to the dry ingredients and mix only until combined. Do not over mix.
  4. Grease and flour two 9x5 inch loaf pans. Divide the batter between the two loaf pans.
  5. Bake at 325 F for 45 - 50 minutes or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before turning onto a wire rack to cool completely.
  7. Sprinkle top of loafs with powdered sugar.
